"5S Management" containing 5 sets of laws including Structurise, Systematise, Sanitise, Standardize and Self-discipline, is regarded as a prototype for environment and the upgrade of quality and efficiency.
Beginning from the year-end of 1999, Hong Kong Association of 5S inaugurated a "5S Company Certification Plan". Ocean Empire Food Shop was invited to be the first enterprise to participate in and passed the certification successfully. It became the leading food shop in Hong Kong attaining the "5S Management Certificate". The largest reward that the company gained from this certification was to let all staff understand and recognize more about the "5S Management" so as to establish their sense of self-discipline. The culture of "5S Management" has then been deeply rooted in Ocean Empire.
The company in each year would keenly sponsor all offices, workshop section heads and branch supervisors to receive training from the Principal Franchised Assessor of "5S Management", Professor Ho Guang Ming, lead Assessor and Founder Chair of 5S Association, with the purpose to extend this "5S Management" to all these locations.
By setting up an internal "5S Audit Team" and organizing two times as a year the "5S Management Assessment Election", not only the best performed shop and Factory are elected, the actual realization of such management in offices, Factory and branches could be closely monitored. |

Qualified products and service should be under the controlling of right management system. Each product should have definite production procedures for achieving the equal effect of quality and quantity. Therefore, Ocean Empire has spent a lot, and employed professional consultants for managing staff and implanting ISO system. Finally in 2002, the central kitchen and all branches have got ISO9001 (2000) authentication, which indicates our management level meeting international standards.
As the increase of requirements of sanitation in Hong Kong, the company has introduced the HACCP system (Hazard Analysis Critical Control Point). In 2004, the Company has passed the review of international Certifying Body, and has become the first restaurant achieving HACCP certification in Hong Kong.
In the year 2006, Ocean Empire Food Shop are willing to pass ISO22000. Which covers the whole procedures of food chain, including planting, breeding, rough processing, distribution, transportation, storage, and sending to consumers finally, besides dietetic industry.
ISO22000 is also applicable to all food processing enterprises, analyzing possible hazard substance occurring in production and processing procedures of any organizations in food chain, and confirming critical control points. The hazard substance will decrease to the level accepted by consumers.
Food safety may be more important than food dainty. The decision that the update ISO22000 food safety management system is adopted in the company, depends on the reliance increase of customers. |

| Food Shop Comprehensive Sanitation Scheme |
Ocean Empire Food Shop has been always paying serious attention to the sanitary aspect. To meet the company requirement, there is a set of stringent rules monitoring the personal hygiene of all staff. In order to fulfill a thorough cleaning and sanitary condition, since March of 2001, other than wearing hair veils, all catering staff in all branches should put on sanitary surgeon’s masks and those handling food should wear gloves as well. These series of hygienic measures are originated by Ocean Empire in the industry, and are also being highly praised and valued by the customers. |
